Quick Tip to Sneak Some Veggies In!

*I grated a medium sized zucchini into my ricotta cheese and egg mixture for my homemade lasagna tonight.  It gives the mixture a light green tint and the kids won't even notice with all the sauce and cheese on top!

Tater Tot Surprise!


Ok, this meal is very easy and very "gross" looking to cook!  HA!  But, the end result is fun and tasty.
*ground beef
*bag of frozen tater tots
*2 cans of cream of mushroom soup
*1 small sour cream
*shredded cheese



You place the frozen tater tots in the casserole dish, cover it with the cooked and drained meat, then cover that with two cans of cream of mushroom soup and the sour cream (mix those together and then poor over) then I like to pour a cup of milk over the entire dish for something wet (i don't know why i do, i just add milk) lol!  Then cover with cheese and some salt and pepper to taste.  Bake for 30-45 minutes at 350. 

I didn't take a picture because we all dove in.  but i promise it was yummy and fun.

you could also take out the sour cream and cream of mushroom soup and add a few cans of chili instead.  VERY YUMMY as well.

Spring Break is in The Air!

I have been busy "Spring Breaking" it this week with my children and it's been fantastic!  We opted out of going out of town and have made the most out of where we live. Good Ol' Houston! 
I wanted to let you guys in on a little secret! 
A few years back I found the most amazing box of cookies for only $3.50.  The Thanks A Lots from the Girl Scouts! My daughter no longer sells them but I buy them each year from the local scouts sale or from friend's.

The secret I wanted to share with you is that I don't buy them to eat 
 (well, I do eat one box)
 but I buy them for gifts.

They say Thank You in different languages and have an
AWESOME layer of chocolate on the back! 
I place them in a gift sack or just tie a bow around them with a little note of thanks.  I try to purchase a dozen each year and I usually run out by the fall! 
They really make someone's heart smile!

Now, let's make your tummy smile!
Here's a recipe!

Chocolate Thanks-A-Lot™ Éclair



Ingredients:


1 package Thanks-A-Lot™cookies
1 (3.4 ounce) package instant vanilla pudding mix
1 1/2 cups milk
1/2 (8 ounce) container frozen whipped topping, thawed
1 (16 ounce) package prepared chocolate frosting


Instructions:


Line the bottom of an 8-inch round cake pan with Thanks-A-Lot™ cookies. In a large bowl, combine pudding mix and milk. Stir well. Stir in whipped topping to pudding mixture. Spread half of mixture over cookie layer. Top with another layer of Thanks-A-Lot™ cookies and the remaining pudding. Top all with a final layer of Thanks-A-Lot™ cookies and frost with chocolate frosting. Refrigerate until serving.


Makes:6 to 8 servings

Blueberry Drops!

My family is SLOWLY turning 2010 into a year of healthy, MOSTLY organic, natural foods!  We are reaching for grass fed meats when we can and trying to do a total overhaul on our bodies and minds!  With that said DO NOT get ready to be seeing a COMPLETELY Organic family here!  We are trying, I repeat, trying to live a healthier life!  For me that means getting more fruits and veggies into my kids bodies each and every day and doing WHATEVER it takes to achieve that!  There I said it!  WHATEVER it takes! 
So, I have decided they need blueberries any way I can do it!  I told my daughter the other day that we are reaching for foods that have a face or come from the ground!  She about flipped! But then she calmed down when I said instead of candy we will be reaching for chocolate when we need a fix! 
You just dip some blueberries in chocolate, set them on wax paper and when they are completely dry (un-gooey) you put them in little baggies in the fridge for a quick snack for the kids or put them in lunchboxes or all natural, organic yogurt in the morning tastes, OH SO GOOD, with these little surprises! 
Now, can anyone point me to a healthier chocolate? Should I just melt some baking chocolate chips and do it that way? I was thinking of going with dark chocolate morsals.  HELP you healthy eaters out there! 
EXTRA: I bought two sets of these heart sticks from the dollar tree and tied a black bow around them to use as part of my decorations for a dinner party I had the other night (blog coming soon). I am still not a good picture taker, so this pic doesn't do it justice!
But afterwards I used it in my every day decorations in my home until Valentines is over! 
I must say my family is SO excited about the
homemade decorations I have put around the house this year! 
Well, my hubby is excited about the low amount of funds that have been needed!  HA!

Day 30 of Me, Then. We need a recipe!


This is going to be a "random" set of pics because I get so overwhelmed when I share recipes with you all that I forget to take pics!  HA!
I thought we needed a recipe!  It's been FREEZING in Texas this January so I wanted to try a "new" roast recipe! 
Meet the Cast:
  • I can of Golden Mushroom Soup
  • I can of French Onion Soup
  • Sliced carrots, onions and celery (amount of your choice) as you can see I chose presliced!
  • a roast of course (also of your choice)
  • 5 red potatoes cut in half
  • 1/2 cup of water

Place the cooker on high and put the potatoes in.


Then add the veggies.

Set that hunk of meat right on top!  I salt and peppered it!


Then in a seperate bowl stir together the two soups and 1/2 cup of water.

Pour the entire mixture over the top and leave it on high for 1 hour,
 place it on low for 6-7+ hours.

And here is my "random" recipe!  I forgot to take after pics!  But I will tell you this is from Southern Living's Busy Mom's Cookbook and it was to die for!  I made a pot of rice and my family dove in and never came up for air!  We loved it!

Day 20 of Me, Then! Chicken Spaghetti Anyone?

I made PW's Chicken Spaghetti and I must say that it was not a
"Jackson Kid Friendly" one!
While hubby and I loved it, it needed WAY more cheese and less veggies for my kid crew!
But, with some Julie tweeking it will be just fine!
If only I could tweek the need for a live in maid!

Day 17 of Me, Then! YUMMY green surprise!

My husband and I, LOVE to cook! Lance has always been a grilling man, and I put food on the table, but I don't do many "recipes". I usually do a meat, vegetable and a starch. SIMPLE SIMPLE SIMPLE! No sauces, no seasonings besides salt, pepper and maybe season salt!
Oh, the times have changed!
On this day of Me, Then. We did the Pioneer Woman's simple Pinto Beans.
  1. rinse the beans off
  2. cover them with water (about 1-2 inches above them with water)
  3. dice 4 slices of thick bacon and toss them in.
  4. Bring to a boil and then cover and simmer for 3 hours.
  5. Then add a tablespoon of Fiesta Pinto Bean Seasonings and let it go another hour.
  6. YUMMY! Salt to taste and I made some store bought cornbread.

I didn't even use my mixer for this meal, but she was just looking at me the entire time so I had to take her pic!
Then we made grilled corn and a scallion vinaigrette. OMG! It was divine! Here is the link! Its too much to explain, but Bobby Flay knows what he is doing!

(tip, soak the corn in water for at least an hour before you put them on the grill. It helps with burning.)

(tip. Buy yourself a good bowl with a handle and mouth. It makes pouring batters, or any mixes SO much easier! Trust me!)

My hubby added some DJ's Original Boudain and OH MY! It is wonderful with the beans and corn!

(tip. When grilling boudain coat them first with cooking oil, it helps with burning and sticking to your grill)

Day 16 of Me, Then! Egg in a Hole!

Ok, stop right now and go get this darn cookbook! RIGHT NOW! It's at Walmart! Go, NOW!
On Day 16 of Me, Then, I woke up with FULL intention of going to church and starting the year off right with God. Well, after a few hits on the alarm clock and a son with a VERY runny nose I decided to pray about strength for the upcoming year and let all my babies (hubby included) sleep in! We will get back to my spiritual walk in another blog! Oh, and before I forget, I made "Egg In A Holes" for breakfast! This is the Pioneer Woman's above and in the pics below you can see mine! Pretty darn awesome for my first time!

I used a mason jar lid ring for my circle cutter and saved the circles for my sons mayo and cheese sandwiches for lunch (yes, I said mayo and cheese).
We used white wheat bread (gotta cut calories somewhere because I was not skimping on the butter) HA!
Put that cute piece of bread in that melted butter!
Drop that egg in that hole!

After a minute or two, flip it!

There you go! Salt and pepper to your liking! For a healthier version, use low fat or no fat butter and only an egg white!

Julie's Carbonara (everything but the kitchen sink)!

I was inspired by a dish I had at my friend Kristie's a few weeks ago and I couldn't stop thinking about it. Then I remembered a Carbonara I had made once from Southern Living's Quick and Easy Weeknight Favorites cookbook, that I decided to make it "My Way". This will SEEM like lots of ingredients, but it was SO much fun to make, my kitchen looked like a war zone and Lance about fell over when he took his first bite. He LOVED it! Said it tasted like something from a gourmet restaurant! You MUST try this at home! ;o)
Ingredients:
Angel Hair Pasta
6 strips of bacon
One Bag of Frozen Peas
Minced Garlic
1 Jalapeno Pepper chopped
1/3 of a green onion bundle chopped
1 cup of mushrooms sliced
1 lemon
Extra Virgin Olive Oil
3 Egg Yolks
Pepper to Taste
1. Start by frying 6 strips of bacon. (then begin prepping the other things) After the bacon is crispy (not too crispy) set on paper towels to absorb the grease and leave the bottom of the pan with the bacon grease lightly coating it (if you have too much pour it out, you just want a light cover).

2.Begin boiling your Angel Hair Pasta after you have started your bacon.


3. Chop your 1/3 of a green onion, 1 Jalapeno Pepper and cup of mushrooms.


4. Then Whisk together 3 egg yolks and set aside.



5. By this time your bacon should be done and your pan is still hot and on medium heat (don't forget to watch your pasta). Pour into the skillet your mushrooms, jalepeno pepper, green onions, tablespoon (or two) of your minced garlic and half the bag of frozen peas (give or take). Cook until all tender and to your liking.


6. This is the fun part and I am sorry my directions are a bit every where! I don't know how to tell people how I cook! HA! But you drain your pasta (I set half aside for the kids to butter and eat) and the other half I poured into a large bowl. I put the egg yolks in and mixed it all into the pasta. It was sticking a little so I sprinkled a bit of water as I mixed and once the yolks had coated my pasta I threw in all my cooked ingredients (chopped up cooked bacon as well) and poured olive oil in! Just drizzed it all over the pasta and mixed, mixed, mixed! Then I added some pepper on top and squeezed a lemon all over the pasta! (It could of used two lemons, I love lemon). There you go!




It was so good and you can change it into SO many different ways! Shrimp, or chicken, or no meat, or whatever you want!
*I used a whole wheat pasta.

It was fun and Lance wants it again really soon!
